Jeff Knoch, owner of Jeff’s Texas Style BBQ, was born and raised in SW Ohio. Growing up in the Midwest he thought that BBQ was grilled chicken with BBQ Sauce slathered on it. He moved away from Ohio at an early age and spent time living in Arizona, California, New Jersey until he finally arrived in Washington State. Please note that none of these states are known for their BBQ. Jeff didn’t have a clue what real BBQ was until 1995.
In the mid 90’s Jeff was a musician and happened to find himself in Texas playing at a music festival. A friend invited him out for lunch at a BBQ joint and he got his first taste of authentic BBQ. He got some smoked meat on a tray with butcher paper. He asked for sauce. They replied that they did not offer sauce, and that if the meat was smoked correctly it did not need sauce. After lunch, Jeff agreed. Upon his return home, he started thinking about smoked meat. A lot. It wasn’t long before he had purchased a few different types of smokers and started along the road that ultimately led him to open Jeff’s Texas Style BBQ Marysville Washington.
No culinary training. No freezer. No Microwave. Old recipes.
Everything made fresh daily from scratch . Jeff doesn’t know any other way to do it.
When you stop in, please feel free to ask Jeff about his philosophy of brisket – it just might blow your mind. Ask for a pit tour – maybe he’ll have time to accommodate you. Ask for his recipes – he’ll gladly give them to you.
No secrets – we slice the meat right in front of you. Smoke? Yes. Delicious smoke from the Post Oak wood Jeff imports from Austin, TX to use in his smokers. As authentic as it can be.

Our most recent Yelp Review - had to post it. This is what we're trying to do every day. Thanks Michael S.! I am a regular a Jeff's and have hesitated to write a review until this point in order to ensure that I am not simply being biased. With that in mind, if I may offer a unique perspective. Jeff's BBQ has not changed since the day it opened. Minor additions to the sides, more staff to accommodate the increase in traffic, but still the same humble Man (Jeff) and the GREATEST Texas Style BBQ in Marysville and arguably the greater Seattle area! Simplicity and consistency being some of the most valued characteristics of true BBQ, Jeff has elevated his chosen foil into an art form. Each bite is an invitation to the smoke pit, and as you chew you can almost hear the yarns being spun as slow cooked pork and beef fill your palate with their savory additions to the smoky air. To eat Jeff's BBQ is not simply to fill ones stomach, but to experience the very spirit of it. I have had the pleasure of watching the smiles and laughter as the staff patiently wait for patrons to make their decisions, and then sit and eat and to hear the silence of good eating interrupted by the occasional grunt or squeal of satisfaction as a particularly great piece of fat or bark is had upon. And then in the most intimate of ways, the way that makes BBQ so great, Jeff comes out from his smoke pit and sits down for a conversation, thus completing the cycle of a true Texas BBQ experience. It's a no frills, no gimmicks invitation to a place of great tasting simple food, good beer, and good friends round the Pit. And then this morning..... Shade B. 1.0 star rating 8/21/2017 Jeff your bbq sucks compared to ours. Your sauces, meats, salads and deserts. Beans and corn bread forget it DUDE.
